Rootin’ Tootin’ Chili Cook Off Cape May Events

When it comes to good old fashioned camping comfort food, a big bowl of chili is hard to beat. There are many different variations on this classic dish. Whether you use ground beef or pork, kidney or pinto beans, sour cream or cheese, one thing is for sure. A hot bowl of chili is the perfect stick to your ribs meal for sharing around the campfire.
If you need a little chili inspiration and enjoy rich Latin flavors, this mole’ inspired chili recipe is a spicy bowl of fiesta fun.
1 Pound Ground Beef
1 Large Onion (diced)
2 Poblano Peppers (chopped)
1 Stalk Celery (chopped)
3 Cloves Garlic (crushed)
1 Can Black Beans
1 Can Pinto Beans
28 ounce Can Whole Tomatoes
1/2 can Chipotle Peppers In Adobo Sauce
2 TBSP Paprika (smoked)
1 tsp Ground Cumin
1 TBSP Dried Oregano
2 TBSP Unsweetened Cocoa Powder
2 Bay Leaves
1/ tsp Pepper
Oil (for saute’)
Chop onion, celery and peppers and saute with oil in large pot until almost browned. Remove veggies from pot and set aside.
In same pot, brown ground beef. After meat is fully cooked, add in garlic, paprika, cumin, oregano, cocoa and black pepper.
Add sauteed vegetables back into the pot along with beans, tomatoes, bay leaves and chipotle peppers. (for a less spicy chili, use less chipotle peppers)
Simmer uncooked for about an hour. Salt and pepper to taste. Top with avocado, cilantro, sour cream, green onion or cheese.
